Gibilée is our extra brut classic method sparkling wine, produced from a blend of Chardonnay, white vinified Merlot, and Pinot Noir.
A wine focused on balance and complexity, capable of accompanying an entire meal while always maintaining elegance in the glass.
The current vintage available is 2016, with a long aging period of 96 months on the leesgiving depth, finesse, and persistence.
Organoleptic profile
Gibilée presents itself with an intense straw-yellow color and a fine, elegant, and persistent perlage..
On the nose, fruity, soft, and enveloping aromas emerge, while on the palate the sip is intense, dry, and velvety.
Food pairings
Its versatility makes it perfect:

- as a dessert wine
- but also as a true “all-meal” wine
Morè: the new face of classic method
Morè represents the latest evolution of Cascina Ronchetto’s work in the world of sparkling wines.
It is a zero dosage classic method sparkling wine, produced from 100% Chardonnay created with the goal of expressing precision, verticality, and elegance.
The current vintage available is 2018, with 80 months on the lees.
While sharing finesse and structure with Gibilèe, Morè has a different identity: more direct, vibrant, and contemporary.
After fermentation, the wine also undergoes maturation in a 5 hl oak tonneau for six months, adding complexity and depth without overshadowing the freshness of Chardonnay.
