Gibilée

This is an Extra Brut Metodo Classico sparkling wine, produced with Chardonnay, white-vinified Merlot, and Pinot Noir. It stands out for its intense straw yellow color and a fruity, soft, and enveloping bouquet. It is perfect as an aperitif, but truly expresses its excellence with shellfish and fish dishes, and also as a dessert wine, full-bodied wine for the entire meal.

Training System: Guyot 200cm row width and 80cm plant spacing

Vinification: the grapes, after gentle destemming, are left at 0/5°C for several days for cold soaking. Vinification takes place in stainless steel tanks with maceration for at least 20 days at a controlled temperature. At the end of fermentation, the noble lees undergo bâtonnage for about 30 days, followed by a second fermentation in the bottle for 96 months.
