- Pairings: Ideal with all types of red meat, roasts, boiled meats, game, and to pair with medium/long-aged cheeses. Also excellent with porcini mushroom risotto.

- Aging: For a minimum of 24 months in French oak barrels (15 hL), 225 L barriques, and 500 L tonneaux. Followed by a further minimum of 18 months of bottle aging
- Harvest: Manual harvest in 25kg crates
Training System: Guyot 200 cm row width and 80 cm plant spacing
Vinification: the grapes, after gentle destemming, are left at 0/5°C for several days for cold soaking. Vinification takes place in stainless steel tanks with maceration for at least 20 days at a controlled temperature.
Organoleptic Characteristics
Deep ruby red color.
Bouquet with hints of blackberry, cherry, and licorice.
Soft, enveloping flavor with thick, evolving, and maturing tannins.
