Technical Sheet

Training System: Guyot (with a 200cm row width and 80cm plant spacing)
Vinification: 8 hours of skin maceration, followed by soft pressing, temperature-controlled fermentation in stainless steel, fermentation at 15°C for 30-35 days in oxidation-reduction. At the end of fermentation, the noble lees undergo bâtonnage for approximately 30 days.

Organoleptic Characteristics
  • Light cherry pink color.
  • Intense olfactory spectrum, where floral and fruity notes of rose and ripe cherry are accompanied by puffs of rosemary and thyme.
  • Il sorso è avvolgente e vellutato, con richiami – coerenti con il naso – di ciliegia rossa matura e cenni più dolci, di zucchero filato e caramella al lampone. Finale rotondo e avvolgente al palato, di discreta sapidità e freschezza.
